What I eat in a day (Healthy-ish)

Let me start by saying that I am not a dietitian nor am I your perfect healthy eater because as much as I try and eat healthy, I usually give into my sweet tooth or salty cravings.
I do try and keep my physical and mental health balanced and in good shape through the food I eat and through working out. I never try and limit the food that I can eat, and instead try and maintain a balance between everything. Usually for breakfast and lunch I have very basic things but for dinner, my mom and I have been going crazy on finding recipes, and I will list some of my favorites at the end of this article during the dinner part.
Breakfast!
Most days in the morning at 9:30 I will do my workout and eat breakfast after that. One of my favorite dishes that I make in the mornings is an egg sandwich or egg on toast.


I try and mix my protein with of course the carb, which is the English muffin or a piece of toast, and some assortment of fruit. My go-to fruit is usually kiwis, blueberries, avocado, grapes, bananas, mangoes or apples. I am a very weird person and I cannot have the same layout of a meal everyday or I will begin to dislike every part of it. I try and change it up when I am starting to feel weary and will lean towards a smoothie or scrambled eggs and hashbrowns. With my meals, I always try and drink lots of water, especially after a workout. I am a peculiar person because I am not really a fan of regular water and only enjoy drinking carbonated water from my Sodastream, or water with lemon and cucumber.

Lunchtime
I tend to go smaller with my meals and try and have something quick and easy.
Sometimes I will go for nachos, a grilled cheese, or cheese and crackers. I found an amazing recipe for a chia seed pudding (https://www.simplyquinoa.com/healthy-chia-pudding/) too that I use a lot. There are so many different things that you can add to the pudding, but for me personally, I like mine just plain and sweet! Just a little tidbit though, I use rice milk in my pudding and you must stir it frequently in order for the chia seeds to separate and it may take a while for it to thicken. I try and eat whatever fruit that I didn't eat in the morning and of course drink my water too, or some of my rice milk. For today's lunch, I just made some cheese and crackers with some pepperoni slices, chia seed pudding, an apple and a glass of carbonated water. As I said, I love just having my simple meals for breakfast and lunch and having my main meal for dinner.


Snacks!
I eat snacks too throughout the day. Sometimes I am wanting something salty, or I will be wanting something super sweet. My mom and I have been baking like crazy and have made some pretty good cookies, banana bread and Jello-O shots. Our favourite chocolate chip cookies are made from a recipe that we actually found on the back of the flour bag. It is sooo easy and quick to make. I brought some to my friend and he enjoyed them a lot too! Another cookie recipe that is delicious is the: Chewy Sugar Cookies (https://www.alattefood.com/chewy-sugar-cookies/). If I am craving salty I always will always grab some chips. My favorites are Regular, Dill and Sour Cream and Onion. If I am feeling particularly healthy than I go for some more fruit like a banana.
Dinner Talk
Dinner is my favorite mealtime and I love finding new recipes to try! Usually for dinner it is my heaviest meal.
I have been doing a lot of research on finding meals that I can learn to perfect for myself and my future family. When I do find recipes, my family sometimes tries to add different things to make it taste even better. We have made: Easy Homemade Chicken Taquitos and they were exquisite (https://www.familyfreshmeals.com/2019/07/easy-homemade-chicken-taquitos.html). Of course, we loaded them with onions and mushrooms and made them crispy in the oven. They were fantastic even though they may have looked messy and very large, like mini burritos.

One of my greatest findings is: Vegan Caramelized Onion & Spinach Pizza Rolls (https://shortgirltallorder.com/vegan-caramelized-onion-spinach-pizza-buns). Even though this does say "vegan" we did add some cheese to it as well, and for next time we will be adding some pepperoni. This recipe takes up some time as you have to make the dough a day before, but it is so worth it.
Another amazing and super easy finding is: Baked Ground Chicken Tacos (https://togetherasfamily.com/baked-ground-chicken-tacos/?utm_medium=social&utm_source=pinterest&utm_campaign=tailwind_tribes&utm_content=tribes&utm_term=1000004616_44202948_140378) For this recipe we added onions and tomatoes into the mix, and it was so delicious. Adding some salsa and sour cream makes the whole entire meal come together.
This is my favorite meal that that I could eat every day. My family has been trying to have more plant-based meals, and I have found the most tasty chickpea meatball recipe ever. Firecracker Chickpea Meatballs (https://www.connoisseurusveg.com/chickpea-meatballs/#wprm-recipe-container-19241) are so good that we made no changes to the recipe at all. My family uses brown rice and the firecracker sauce tasted so good with it as well.
These are basically my everyday meals, and I am happy that I got to share my favorite ones! I hope these give you some really good ideas, and inspire you to try some new recipes on your own.
